Quick and easy breakfast meal prepl!
Many people struggle with breakfast ideas or are not "breakfast people", These egg bites are the perfect thing to pop into the microwave or air fryer in the morning for a quick easy way to start your day.
Ingredients:
Egg white container
Spinach
Frozen tater tots (I used stop and shop brand)
Part Skim Shredded mozzarella cheese (I used bowl & basket Shop Rite brand)
Salt
Pepper
Any other seasonings you may like (red pepper flakes, garlic powder, onion powder, etc.)
Directions:
Preheat oven to 400 degrees Fahrenheit
Defrost your tater tots
Grease a cupcake tin with cooking spray
Chop your spinach very finely (a hand full)
When the tater tots are squishy, put three at the bottom of each cupcake slot and mash them down using a spoon so they create a base
Next, pour 40g of egg whites into each slot
Add a pinch of the chopped spinach
Season with salt pepper etc.
Add 8 grams of shredded mozzarella on top
Bake at 400 for 8-12 minutes (I usually do about 10, but keep any eye out on them)
Macros per egg bite:
100 Calories
Protein- 6.6 grams
Carbs- 8.6 grams
Fat- 4.4 grams
This may vary depending on what brands you use for cheese & tater tots.
Voila! Tasty quick meal prep & less calories than a Starbucks egg bite. Enjoy :)
